Evans & Tate were at the forefront of Margaret River's rise to international recognition as one of the world's great winegrowing regions. The archetypal Margaret River Semillon/ Sauvignon blend is a genre unto itself and has consistently merited high critical acclaim internationally from peers and public alike. A long cool vinification is essential to achieving a wine that's driven by Semillon. A quarter of the fruit is barrel fermented in seasoned and new French oak barriques and puncheons, a portion on high solids through the action of wild indigenous yeasts to impart spice, texture and style. Five months of regular lees stirring battonage to build richness and complexity are followed by the final assemblage. Alcohol 12.5%
The Margaret River's salubrious maritime climate of mild, wet winters and warm, even summers, produces Sauvignon Blanc that's more tropical in style than the grassy herbaceousness of cooler districts. Margaret River Semillon is generally noted for its thistle/ vegetative qualities and for the weight and structure it carries. Fruit sourced from the cooler Karridale precinct and a very protected site in Wilyabrup coalesce into a unique style of wine which best articulates the exhilarating vitality of the classically dry Margaret River white.
Pale straw, vibrant green hue. Llifted grass and lime zest aromas combine perfectly with fresh herbal gooseberry notes of Semillon. Limited use of French oak integrates delicate spicy, mineral notes. The palate is juicy and fresh, subtle layers of lemon and lime, snow pea and gooseberry flavours. These combine beautifully with a touch of minerality before a long, dry finish. Enjoy this classicaly dry white withfresh baked goat cheese tart.
